After you picking and collecting fresh palm fruit from palm tree. It is better to process them within 48hour. If not palm fruit is easy to rancidity after 48 hours. It will cause the increasing of acid value. Acid value is a measure of the quality of oil. The lower the acid value, the higher the quality of palm oil. Thus it is better to process fresh palm fruit.
